After my Q & A session with Julie of Soulicious Foods, I felt inspired to create a clean, healthy snack for my family. My requirements for this recipe were the following: to incorporate Julie’s granola, to use items I had on hand, and to exert very little energy while doing so. After a little research and tweaking, I came up with Eddie’s No-Bake Granola Bites. (Eddie is my son who devoured these delicious little treats, earning him mention in their name.) The combination of almond butter and candied ginger give this snack just the right amount of salty and sweet. I estimate that start to finish, this took all of ten minutes.
Eddie’s No-Bake Granola Bites
1 1/2 cups of Soulicious granola
1/2 cup almond butter
1/4 cup raw honey
1/4 cup coconut flakes
1/4 cup of candied ginger, finely chopped
Mix honey and almond butter together in large mixing bowl. Add granola, coconut flakes and candied ginger. Stir until all ingredients are mixed well. This may take some time.
Roll mixture into small, 1-inch balls (recipe will yield approximately 10-12 balls). I used my hands, and found this to be incredibly messy. Alternatively, an ice cream scooper works well.
STEP THREE (OPTIONAL)
Place in freezer for 1 hour to set.
And that’s all, my friends! Could not be more simple. If you want an extra boost, you could always add in some chia seeds and substitute these for your mid-afternoon coffee.
